Cook and mash the potatoes. Place into a bowl to cool,
then add the uncooked mince and BBQ sauce, mix well.
Brush butter over the base of an ovenproof dish
Cover with a sheet of filo pastry and brush with butter. Continue to lay a sheet of filo brushed with butter over the base a few more times (I layer at least 4 sheets on the bottom).
Add a layer of cheese then some of the mince/potato mix. Cover with 2 sheets of filo brushed with butter.
Continue with the layers until all the filling is used. Finish off with a buttered layer of filo.
Bake for around 30 – 35 minutes in 180-degree oven until golden brown.
Now, depending on the size of your dish will determine how many layers of filling you can do. I used a large dish, so was only able to get 2 layers of filling, however, if you used a smaller dish you'd be able to get more layers.
