Pasta meals especially homemade pasta like gnocchi are such a comfort meal, and is such a great meal that can really stretch and save us money on our budget.
Gnocchi is one of these meals, super simple and easy to make and the great thing about gnocchi is everyone loves it and it is super versatile and freezes will.
You can boil gnocchi for a really quick simple mid-week meal, add it with a nice pesto or tomato sauce and you can have a meal on the table in 10 minutes or less.
Making your own gnocchi is super easy to make if you make a large patch (recipe below) you will have gnocchi in your freezer when ever you need a quick mid-week meal for the family.
Simple add flour in bowl, add in grated potato egg and you have the dough ready. No special technic needed.
Knead into a smooth dough, roll out into 2cm wide logs and then cut into 2cn pieces.
You can get fancy here and roll the pieces over a fork, like below. But honestly, I just like to keep it simple and tend to not do this step. It does not affect the taste or cooking time.
Then all you need to do is boil it until it starts to float around 3 minutes, depends of the size of pieces you have.
For a great versatile meal, I like to add in Chicken or beef pieces to the tomato or creamy sauce.
But one that I really like to do is once boiled either add to the frying pan and fry or place in the oven on a tray for 15-20 minutes in a 180-degree oven. It is great as it gives the gnocchi a hard shell with a soft filling, which is great kas a side dish to any meal.
It is honestly one of my favourite meals and love having it on hand to have anytime.

- 4 Med Potatoes Boiled and mashed
- 1 Egg Lightly Beaten
- 2 Cups Plain Flour
- Boil and Mash Potatoes
- Add in Salt and Pepper
- Mix in lightly beaten egg, mix well
- Add in Flour, mix until firm dough
- Cut into 4 quarters
- Roll each piece into 2cm logs
- Cut into 1cm pieces
- Add to salted Boiling water, gnocchi is cooked when they float to the top
- To Freeze, lay gnocchi on a sheet in a single layer. Freeze then place in a freezer bag until ready to eat
