Looking for a really quick and tasty addition to your pasta or as a beautiful dip for when you have people over. Then this recipe is for you it’s super easy and simple – broad bean pesto.
I also love this pesto on top of fish baked in the oven and is even great to help freshen up that piece of steak, for a lighter tasty meal.
Give this recipe a go when you short on time for a great mid-week meal that is healthy and tasty. Great to get the kiddos to eat their beans and is such a great topping to any pasta dish.
It is also a great addition to your antipasto board instead of heavy cream dips, especially in summer for a lighter and refreshing go to dip.
All you need to do is put all the ingredients into a blender, blend until smooth and its ready to go. It can also be stored in the fridge for a few weeks to use as a quick snack with crackers or even on top of your eggs for that little something different.
For this recipe I actually used Beans as i did not have any broad beans in the veggie patch as my pumpkins took over the bed. But the recipe is the same and is still really tasty.

Now I know it has anchovies and I’ll be honest not my favourite and I do avoid them but you will not taste them at all in this recipe. But they do add the right amount of salt to the pesto and add that little extra something that you can’t get with any other ingredients.
So next time you’re looking for a meal idea and are stuck with what to feed the family give this pesto a go with some pasta for a great meat free mid-week dinner the whole family will enjoy.
Be sure to leave some for the next day to put on your eggs in the morning. This also freezers really well, so for left overs put them in a airtight container and store in the freezer for up to 6 months.
And don’t forget to let us know in the comments below how it goes and if you have added to the recipe, because if you know me I don’t stick to recipes very well and love to hear how others tweak to suite them and their families taste.
