The heat is certainly here… and the last thing anyone of us wants to be doing is being in the kitchen standing over a hot stove cooking dinner or lunch.

So how do we have easy simple but delicious meals for the family and that allows you to get back to enjoying the outdoors with family and friends.
With 4 simple salad dressing ideas that can turn a boring salad of lettuce into a great meal. What’s also great about these dressings is that they can be used on multiple different salad’s like potato, greens or even a pasta. Even a nice piece of fish or chicken.
These dressings are also really light so no heaviness to make you feel even worse in the sun than you like to be.
The great thing about most of these dressings is that the ingredients you will have in your cupboard. The only items I need to remember to put in the shopping are sour cream and cream cheese but even these I normally swap out for Greek natural yogurt instead. It makes it a much nice and lighter meal and I always have a large tub in my fridge it is a go to for me rather than sour cream or cream in most of my cooking.
1. Vinaigrette Salad Dressing
1/2 cup Olive Oil
1/2 cup White Wine Vinegar
1/4 cup Chopped Parsley
2tsp Dijon Mustard
Combine all ingredients in a screw top jar and shake well.
This vinaigrette dressing is great on any green salad, try a salad with mixed leaves, snow peas, cucumber and avocado.
2. Balsamic and Garlic Dressing
2 Tbsp Balsamic Vinegar
1/4 cup Lemon juice
1 Clove of Garlic, Crushed
3/4 cup Olive Oil
Combine all ingredients in screw top jar and shake to mix well.
This is great on a rocket salad. Rocket leaves, pine-nuts and shaved parmesan.
3. Honey Mustard Salad Dressing
2 tsp Honey
1.5 Tbsp Dijon Mustard
2 Tbsp White Wine Vinegar
1/2 cup Olive Oil
Place honey, mustard in a bowl. Season with sea salt and pepper. Add vinegar and stir well. Slowly pour in oil while whisking.
Taste and adjust to your liking.
This dressing is not only great on a pasta or potato salad but is also great poured over chicken or fish.
4. Potato Dressing
Okay this one is a all time favorite for all people big or small and its super simple too.
1/2 cup cream cheese
2/3 cup Sour Cream
1 Tbsp Chopped Mint
1 Tbsp Sweet Chili Sauce.
This one is best mixed with an electric beater, but a whisk does do the job but may take a little longer.
I like to also substitute the cream cheese and sour cream with Greek natural yogurt. This makes it a much lighter dressing but still great tasting.
